GREEN EGGS & RICE

Alternatively titled, Attempting to Be Romantic and Cook at Home on a College Student's Budget!



We're going green! Well at least for one night.

I wanted to make my fiancé a dinner the other night ( I can be sweet sometimes), and I know her favorite kind of dinners are usually vegetarian, because she is sick like that.

I decided to cook stuffed peppers with brown rice, baked asparagus and a fried egg.

Yep, that's sounds gross to me too, but this was for her.

Now this is the first time I have ever done this recipe so as you can imagine nothing came out as it should have.

My rice was under cooked, the “baked” peppers were raw and overall I needed more seasoning.

Hey, I never claimed to be anything more than a humble bird. Cooking is hard with talons.

However, the saving grace came in the form of the perfectly seasoned asparagus and the silky fried egg.



I sliced open the peppers and gutted them like pumpkins on Halloween. Then I filled them with the brown rice and diced carrots, like stuffing a turkey at Thanksgiving. To finish off with Christmas, I added the surprise gift of an egg on top of it all and then broiled those babies in the oven for about ten minutes! Right when the eggs looked cooked, I snatched them out and placed them on plates in an artistic array of earth based tones (now I really sound official).

When we started to eat we cut into the egg first and let the yoke pour into the pepper and the song Chasing Waterfalls began playing in our minds at the same time (Don't go chasing waterfalls...). That was by far my favorite and most tasty part about the dish.

Alaina was chirping with glee at the sight of a vegetarian dinner that she didn't have to cook herself!

Altogether, a successful night...in more ways than one ;)

Rating: STUFFED GREEN PEPPERS WITH EGG

Flavor/Texture: 2

Rice was slightly hard, green pepper was also pretty raw, and everything needed more seasoning.

Color/Display: 3

The plate itself looked like someone was trying to be organized. D+ for effort.

Price: 5

Roughly $2.50 per plate. Grocery Outlet is a God-send.

Food Service: 5

Since I was servicing this food of course it had to be a 5 out of 5!

Atmosphere: 5

Calm and relaxed inside of Alaina's apartment. There are always twinkly lights and lamps so it makes it feel warm and cozy.
